Mini Protein Bites
Need a quick, healthy snack to keep your energy up?
These are one of my new favorites to make! They come together quickly in a food processor, and I just store them in a sealed container in the freezer and pop them out as needed!

Gluten Free Protein Bites
½ cup canned pumpkin
½ cup unsweetened organic Peanut Butter
⅓ cup organic unsweetened coconut flakes
¼ cup protein powder
¼ cup sprouted pumpkin seeds
2 Tablespoons black sesame seeds or chia seeds
2 Tablespoons cocoa powder
⅛ - ¼ teaspoon cinnamon
⅛ teaspoon sea salt
Stevia, to taste (or other healthy sweetener like Raw Honey)
⅓ cup dark chocolate chips (or stevia sweetened)
Directions:
In a food processor, cream the pumpkin and peanut butter.
Next, in a measuring cup or bowl, stir together all the dry ingredients except the chocolate chips.
Pour the dry ingredients into the food processor and pulse to combine. Add in the chocolate chips and pulse a few more times to mix well.
Turn off the food processor and begin to form the “dough” into little cookies or balls to make the protein bites.
Store in a container in the freezer, then bring them out as needed. Enjoy!
