Basil Balsamic Chicken

Basil Balsamic Chicken
5 chicken legs
1 cup water
2 garlic cloves, pressed
1 Tablespoon basil, minced
1 Tablespoon parsley, minced
1 teaspoon oregano, minced
½ teaspoon rosemary, minced
½ teaspoon sea salt
¼ teaspoon pepper
½ Tablespoon avocado oil
½ Tablespoon balsamic vinegar
5 slices tomatoes, ⅛” thick
Feta cheese, crumbled
Additional balsamic vinegar and basil leaves to serve
Directions:
Preheat the oven to 375 degrees.
In an 8x8” glass pan, Place the chicken legs and pour in the water.
In a measuring cup or glass bowl, stir together the seasonings, oil, and balsamic. Slice the tomatoes and have them ready.
With your hands or with a glove on, pat approximately 1/2 teaspoon of the balsamic herb mixture onto each chicken leg. Place a tomato slice on each chicken leg on top of the balsamic mixture. Drizzle extra balsamic on each chicken leg and any additional salt, pepper and garlic powder.
Bake the chicken legs uncovered for approximately 50 minutes.
Pull the chicken out and carefully place feta cheese on each tomato slice. Bake again for approximately 10 minutes.
Remove from the oven to serve. Garnish with green or purple basil leaves and balsamic vinegar, if desired. Enjoy!!
