3 Market Inspired Recipes

Summer flavors are abounding at the farmer's market! This past week there were 2 heirloom tomatoes that needed a happy home, which I was more than glad to provide! Here are the recipes that were inspired:



Sliced Tomato Basil Appetizer


Heirloom tomato slices

1/16 teaspoon garlic powder

1/8 teaspoon sea salt, to taste

Few dashes of pepper, to taste

1/2 - 1 teaspoon Basil infused olive oil

Balsamic vinegar, optional

Green or purple basil leaves

Dollop of hummus, for center garnish

Kalamata olive(s), for center garnish


~Simply layer the tomatoes in a ring around the serving dish.

Sprinkle the seasonings on the tomatoes, then drizzle the olive oil and vinegar (if using). Layer in the basil leaves and garnish with the hummus and olive(s) in the center, if desired. Serve and enjoy!




Easy Breezy Caprese Boats


½ cup diced cucumber

½ cup diced tomato

2 Tablespoons minced red onion or green onion

5 purple or green basil leaves, minced

1 teaspoon golden oregano, minced (plus garnish)

½ Tablespoon Basil olive oil

1 teaspoon Sicilian Lemon balsamic

Sea salt and pepper, to taste

Several Romaine or butter leaf lettuce leaves, washed


~Toss the veggies, seasonings, oil and vinegar together gently and serve in lettuce boats.

Enjoy!









Market Salsa


3/4 cup tomato, diced

3/4cup cucumber, diced

1/4 cup green onion, thinly sliced

1/4 cup purple basil (16 leaves), thinly sliced

1- 1 ½ teaspoons oregano, thinly sliced

1 - 1 ½ teaspoons golden oregano, thinly sliced

Sea salt, to taste

Pepper, to taste

2-4 Tablespoons homemade Italian dressing


~Gently toss the veggies together with the herbs and sprinkle with sea salt and pepper to taste. Pour the dressing over and toss. Adjust the flavor to your liking!
