Baked "Fried" Rice

Cauliflower rice is so healthy and convenient, so I couldn't resist trying it in this fashion- baked "fried" rice!
It is easy, colorful and delicious!

Baked “fried” Cauliflower Rice
1 cup frozen cauliflower rice
2 organic eggs
Avocado oil spray
⅛ teaspoon turmeric powder
⅛ teaspoon garlic powder
Pepper
Sea salt
1-2 cups broccoli florets
1-2 medium carrots, chopped
½ Tablespoon coconut aminos
½ teaspoon Bragg® aminos
1 teaspoon toasted sesame oil
⅛ teaspoon fresh ginger, grated, optional
½ Tablespoon black sesame seeds
Directions:
Pre-heat the oven to 350 degrees. In a measuring cup, beat the eggs and stir in the cauliflower rice, turmeric, garlic, pepper and salt. Spray a small glass baking dish with avocado oil spray, and add the cauliflower “rice” to the pan- the egg mixture should be about ¼ inch thick. Bake at 350 degrees for 25-30 minutes or until the eggs are cooked and set. (The “rice” should be turning golden brown).
Meanwhile, use water or chicken broth to steam the broccoli & carrots.
In a small glass dish mix the aminos, oil and ginger (if using)
Serve the “rice” and top with the veggies, sesame amino “dressing” and garnish with the black sesame seeds.
